In this chemical process, an intermediate product, let's call it "XST2", is being converted to "XST4". The main starting material is XST2, but another is "XST4 AMORCE" and it is added near the end. My understanding of the process is that after hydrolysis, washing, settling, then distillation, the XST4 produced is crystallised, and the crystallisation process is being "seeded" by addition of a small quantity of crystals of the end-product. Is seed/seeding of crystallisation the right word in this context?

I agree with your reading but it's true that the core meaning of amorcer is start/initiate/promote.
For the last one, yes it looks like they package a small amount separately for future seeding.
For the other one how about this:
If required, promote [crystallization] at a core temperature of 20/23°C using SEED AST4

..Hi helen, I don't see what difference that would make to the word you're looking for, one speaks of 'initiation' or an 'initiator' for the molecule, do you think it needs more than that ?
