Kohlrabi
Noun
1. Plant cultivated for its enlarged fleshy turnip-shaped edible stem.
2. Fleshy turnip-shaped edible stem of the kohlrabi plant.
A member of the turnip family, a favorite vegetable of Eastern Europeans, Germans, and Asians. It's not a root, but actually a swollen stem that is globe-shaped with green stems from which spring collard-like leaves. The bulbs can be green or purple in color. It's sweeter, juicier, crisper, and more delicate in flavor than a turnip. The cooked leaves have a kale/collard flavor.
Kohlrabi (Brassica oleracea var. caulorapa or Brassica oleracea var. gongylodes or Brassica caulorapa var. gongylodes), or kohl-rabi, is a low, stout biennial that originated in Germany around 4,000 years ago and is a member of the cabbage family (Gongylodes group). It is a cabbage that was selected for its swollen stems -- in German 'kohl' is cabbage and 'rabi' is turnip and it is so called because it has cabbage-like leaves and a turnip-like bulb above ground.
Varieties include White Vienna and Purple Vienna. Some varieties are food for cattle.
Synonym: turnip cabbage (n).
