Jeg oversætter en levnedsmiddelliste. Under kød og kødprodukter, oksekød, er der en overskrift, der hedder bottom round - det er en bestemt udskæring, der er tale om. Ved nogen, hvad dette stykke hedder på dansk.

Vinterberg & Bodelsen translates klump as 'round'.
The description of beef suitable for pot-roasting fits with comments in some of the Google hits, e.g. http://www.steaksense.com/about/roundcuts.htm
and the definition of the meat coming from the outer leg muscle.
It also compares well with a diagram of 'Oksekød' picked up in a supermarket, issued by Kødbranchens Fællesråd.
I think round is an American expression for what my cookery encyclopaedia (Good Housekeeping Institute, definitely UK!) calls topside.
'Klump' is a part of the same area as the 'yderlår'.
Meat terminology varies a lot from area to area within countries (North to south England for instance - the carcasses are cut up differently...) as well as language to language, but I think you would be safe calling bottom round 'klump'.
I must say I sympathise with your vegetarian tendencies, but living among partial carnivores I do eat meat now and then!
