Being new to proZ and looking at outsourcers' job postings, I have noted that they mention
Quoting deadline and Delivery deadline. Quoting deadline is one day and the Delivery deadline the next day. Does it not take more time from making a quote to having been chosen for the job and agreeing on terms etc to delivering the job?

Translations for businesses/companies are often quite short and have a very quick turnaround. You should probably spend some time browsing through the fora here and getting familiar with the business end of translation before you even start thinking about taking on a job. There's a lot more to it than just translating some random words from one language into another, and there are so many potential pitfalls that could end your career before it even gets off the ground...

I think Norskpro means that the form in the Proz job quotes system includes a small box in which applicants are asked to state their proposed delivery date. The problem obviously is that the delivery date and time depend on the date and time when the job is actually assigned to the applicant, but the box doesn't allow enough space for that.

Job posters are forced to enter this information even if they don't want to, which often leads to them entering bogus information in those fields. Those two dates are actually there for ProZ.com's jobs system to know when it should automatically stop accepting quotes or when it should close the job notice. You should take those fields as mere indications.
In fact, you can ignore the quoting deadline altogether, because the client will likely assign the job long before the quoting deadline has passed. The delivery deadline mentioned in the jobs system is usually accurate (and is a good indicator of the actual deadline), but make sure you confirm this with the client when you accept the job.
