Humbirdさんのご指摘のとおり、過放牧ということばがあり、Google検索数は｢過剰放牧」よりも圧倒的に多いですが、これは中国語からきているものとも思われ、環境問題に通じている人が対象の読者層の場合は｢過放牧」でいいと思います。しかし、一般的にまだなじみがない人が対象の場合には｢過耕作」とともに｢過剰」をまず用いるべきではないかとます。
言葉は時とともに発展するものですから、読者層を考えることも翻訳する時点で必要な要素だと思います。
