フランス語をカタカナにするならサルブリュックでしょうか。
ちなみに昭文社の世界地図（２種類）では、ザールブリュッケンとなっていました。uにウムラウトがついてますから妥当なカタカナひょうきだと思います。ロベール仏和大辞典にもザールブリュッケンとありフランス語読みは記載なしです。
ドイツ名Saarbruckenのフランス語表記ですね。

Sarrebruck is the French Spelling of Saarbrucken (more correctly, "u" has an umlaut). Saarbrucken is "ザールブルッケン" in Japanese.

I agree with Daisuke's comment that it is the French spelling of Saarbrucken, but the katakana spelling is a little different in ALC. Please see the link below.
Also, to further support my spelling, there are 9,200 matches on Google Japan for ザールブリュッケン, while there are only 108 for ザールブルッケン.
